PREPARATION
Season chicken, if desired, with salt and ground black pepper. In 12-inch nonstick skillet, melt 1 tablespoon Spread over medium-high heat and cook chicken 8 minutes or until chicken is thoroughly cooked, turning once. Remove chicken from skillet; keep warm.
In same skillet, melt remaining 1 tablespoon Spread over medium-high heat and cook spinach, stirring occasionally, 2 minutes or until spinach begins to wilt. Stir in tomatoes and cook 1 minute. Stir in Knorr® White sauce mix blended with milk. Bring to a boil over high heat, stirring constantly. Reduce heat to low and stir in cheese; simmer 1 minute. Pour sauce over chicken and serve, if desired, with hot cooked noodles or rice.
