CREAMY CHICKEN ALFREDO

INGREDIENTS
1 lb. boneless, skinless chicken breasts, cut into thin strips
2 Tbsp. I Can't Believe It's Not Butter!® Spread
1/4 cup chopped onion
1 clove garlic, finely chopped
1 package Knorr® Alfredo sauce mix
1-1/2 cups milk
1/2 cup heavy or whipping cream
1/2 cup grated Parmesan cheese
1/4 cup thinly sliced fresh basil leaves or 2 Tbsp. chopped fresh parsley (optional)
8 ounces your favorite pasta, cooked and drained
PREPARATION

Season chicken, if desired, with salt and ground black pepper. Melt 1 tablespoon Spread in 12-inch nonstick skillet over medium-high heat and brown chicken, stirring occasionally, about 5 minutes. Remove chicken and set aside.

Melt remaining 1 tablespoon Spread in same skillet and cook onion, stirring occasionally, 4 minutes or until golden brown. Add garlic and cook 30 seconds. Stir in Knorr® Alfredo sauce mix blended with milk and cream. Bring to a boil over medium-high heat, stirring frequently. Reduce heat to low and simmer, stirring occasionally, 2 minutes. Return chicken to skillet and simmer until chicken is thoroughly cooked. Stir in cheese.

To serve, toss sauce with hot cooked pasta and sliced basil. Garnish, if desired, with additional grated Parmesan cheese, ground black pepper and chopped fresh parsley.

*For a thinner sauce, stir in 2 tablespoons pasta cooking water.
