SUMMERTIME CHICKEN & VEGETABLES

INGREDIENTS
2 Tbsp. olive oil
1 package Knorr® Pesto sauce mix
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
1 cup quartered mushrooms
1 cup sliced onion
1 cup sliced red bell pepper
1 cup sliced zucchini
8 ounces pasta twists, cooked and drained
PREPARATION

Preheat oven to 450°. Blend olive oil with Knorr® Pesto sauce mix in medium bowl; set aside.

Fold four 12-inch pieces heavy-duty aluminum foil crosswise in half to make four 12 x 9-inch rectangles. Place 1 chicken breast on each piece of foil; brush with pesto mixture.

Stir vegetables into remaining pesto mixture; arrange around chicken. Wrap foil loosely around chicken and vegetables, sealing edges airtight with double fold.

Place on baking sheet. Bake 18 minutes or until chicken is thoroughly cooked. Serve with hot pasta.
