INGREDIENTS
2 Tbsp. vegetable oil
2 large zucchini, cubed
2 large red and/or yellow bell peppers, cubed
1/2 cup chopped onion
4 cloves garlic, finely chopped
1/3 cup water
1 KnorrĀ® Vegetarian Vegetable Bouillon Cube, crumbled
1/2 tsp. dried basil leaves, crushed
1/4 tsp. dried oregano leaves, crushed
1/4 tsp. ground black pepper
PREPARATION

Heat oil in 12-inch skillet over medium-high heat and cook zucchini, red peppers, onion and garlic, stirring frequently, 5 minutes.

Stir in remaining ingredients. Bring to a boil over high heat, stirring to dissolve bouillon cube. Reduce heat to low and simmer covered 3 minutes or until vegetables are crisp-tender.
