CANTALOUPE SOUP WITH CHIPOTLE CREAM

INGREDIENTS
1 large ripe cantaloupe (about 3-1/2 lbs.), peeled and cubed (6 cups)
1/2 cup orange juice
2 Tbsp. mint leaves
1 KnorrĀ® Cilantro MiniCube, crumbled
1 cup plain yogurt or sour cream
1 KnorrĀ® Chipotle MiniCube, crumbled
PREPARATION

Process first 4 ingredients in blender, in batches, until smooth. Chill about 1 hour or until ready to serve.

Meanwhile, combine remaining ingredients in a small bowl; chill until ready to serve. Serve chilled soup topped with chipotle mixture.
